That what I figure <a href="http://www.rudisglutenfree.com/" target="_blank">Rudi’s Gluten-Free Bakery</a> had in mind as they went through 100 different formulations in the pursuit of a soft and tasty gluten-free bread. I first heard that factoid while sitting at Rudi’s Blogger Breakfast before <a href="http://www.celiaccentral.org/Events/Events-Archive/Appetite-for-Awareness-2010-Post-Event/441/" target="_blank">Appetite for Awareness 2010</a>. <em>Wow, that’s dedication,</em> I thought, <em>but I doubt it compares to the real thing</em>. I was still new to gluten-free, so I hadn’t sampled many breads, but I certainly had heard tales of dry and crumbly loaves.</p>
<p>As I sat there pondering the patience those researchers must have had to rework the recipe time and time again, a basket of toasted Rudi’s Gluten-Free Bread was placed on the table. My stomach grumbling, I quickly grabbed a slice of <a href="http://www.rudisglutenfree.com/gluten-free-bread/products/multigrain/">Multigrain</a> (it comes in Original and Cinnamon Raisin, too). No butter, no jam – I wanted this taste test to be toast and toast alone.  I bit and chewed. Nice crunch, hearty flavor and no weird aftertaste, just like a typical piece of toast. In fact, if I hadn’t been told it was gluten-free, I would have thought it <em>was </em>a traditional loaf – a point that comes in handy when you’re serving a mixed crowd of gluten and gluten-free eaters.</p>

But as Appetite for Awareness proved, nothing beats the basics. From little girls to grown men, attendees hovered around Rudi’s booths and faced a daunting decision: <a href="http://www.celiaccentral.org/News/NFCA-Blogs/Recipe-of-the-Week/More-Recipes/159/search__grilled%2bcheese/vobId__4645/" target="_blank">Grilled Cheese</a> or Peanut Butter &amp; Jelly? For some, it was the first sandwich they’d had in years, and fortunately, it was a <a href="http://www.youtube.com/user/rudisbakery#p/u/0/2f121WtRPyg" target="_blank">win-win</a> either way they went. The PB &amp; J showed off the soft and light texture of Rudi’s Gluten-Free Bread, while the Grilled Cheese was a toasty hug around ooey gooey goodness.</p>
<p>Now you too can enjoy the dilemma, as Rudi&#8217;s Gluten-Free Bread is popping up in specialty and mainstream stores. I&#8217;ve seen it at my local Whole Foods Market; if you can&#8217;t find it, check the freezer, ask an employee and, if all else fails, request that they order it.</p>
