It has been awhile since I had a corn muffin, that is, until I found myself snowed in on a Sunday with a box of Bloomfield Farms Gluten-Free Cornbread and Muffin Mix. With the only additional ingredients being water and an egg, I decided to give it a whirl. Corn muffins have never been my favorite, so I was pleasantly surprised that I actually enjoyed these muffins. I don’t know if my tastes have changed, or if this mix just provided a moister, less crumbly muffin than the store-bought versions I am accustomed to.
