I have had a hankering for a chicken salad sandwich for the past few days and I finally made it to the store to grab some last night.  When I was putting my lunch in the fridge at the National Foundation for Celiac Awareness (NFCA) office, I realized that I completely forgot to grab bread for the sandwich.  As luck would have it, we recently received some samples of gluten-free Blue Diamond Artisan Nut Thins.  So, naturally, I made mini chicken salad sandwiches for lunch.

I’ve been a big fan of the Blue Diamond Almond Nut Chips for a while.  I buy them fairly regularly and add them to salads and just snack on them plain.  Until today though, I hadn’t tried out the Artisan Nut Thins.  They are available in three varieties, so I made the mini sandwiches with each variety: Multi-Seeds, Flax-Seeds and Sesame Seeds.

In a nutshell (get it?), I will be adding the Artisan Nut Thins to my shopping list now.  While I still enjoy the original Nut Chips, I like how the Artisan Nut Thins don’t have any of the seasoning or powdered flavoring on them.  All of the flavor comes directly from the ingredients themselves (the seeds).  I love flax seed, so these were my favorite.  The taste differences between the varieties of Nut Thins were subtle, so I definitely enjoyed all of them.

The gluten-free Nut Thins taste great and they’ll hold up your toppings, too.  I didn’t have any issues with the crackers breaking or crumbling.  These will make a great appetizer at your next party; the possibilities are endless.  My mom and I are fans of adding green olives or walnuts to chicken salad, so you could easily make a slightly more elaborate version of my impromptu mini sandwiches.  You could top with the traditional cheese and meat or with tomato slices and fresh mozzarella cheese.  NFCA volunteer Laura Hanley of G-Free Laura even came up with an amazing Garlic Buffalo Chicken Nugget recipe using the Blue Diamond Artisan Nut Thins.
