With Valentine’s Day coming up, I’ve been receiving a lot of gluten-free cookie samples. The latest batch to arrive at the National Foundation for Celiac Awareness (NFCA) office are from Soulfully Sweet and let me tell you, these cookies certainly live up to their name.
I received eight bags of cookies with seven cookies in each so I definitely needed some help with these. Per the instructions on the bag, I froze them until we were ready to try them out. Our Office Manager, Suzanne Welz, put them out for us at our weekly staff meeting so everyone could taste them.
I went for the Orange Cranberry Pistachio Cookie. There are a lot of flavors going on in this cookie, but I thought it was pretty good. There was a strong orange taste, but I could taste hints of the pistachio and cranberry as well. I was really surprised by the texture of the cookie, especially after they had been frozen, but they were still soft and moist and just the right texture.
NFCA’s Founder and President Alice Bast doesn’t eat any kind of oats opted for the Spice Cookie, which she called “yummy delicious!” She thought the same thing I did about the texture of the cookie…just right.
Cheryl McEvoy, our Director of Communications and New Media shared a sleeve of the Chocolate Chip cookies with her friends who don’t eat gluten-free. Her friends were really surprised by how soft the cookies were as they were expecting something much harder. Cheryl thought the chocolate in the cookie was the perfect choice for a delicious chocolate chip cookie.
The remaining cookies have been slowly disappearing from the kitchen, so I think it’s safe to say they were a hit with the rest of the NFCA staff too.
