I was turned onto Rachel Lu Gluten-Free Foods when I tuned into the G-Free and Happy show a couple Mondays ago. I really loved the story of how Rachel Lu came to be, and was especially interested in the products because the head honcho is a Nutritionist! In my search for gluten-free baked goods that taste good and aren’t completely chocked full of sugary substitutes, I had hit the jackpot!
When you eat a Rachel Lu goodie you can tell that it’s made from natural ingredients and you don’t get that guilty I shouldn’t be eating this feeling. Rachel Lu muffins and cookies are made with fiber, antioxidants, Omega 3’s, and moderate amounts of sugar (thanks to Stevia).
The muffins have less than 250 calories, which is actually quite awesome considering some of the caloric amounts you find in other gluten-free brand’s sugar-crumble mountains that are disguised as muffins. I didn’t feel like I ruined my diet by enjoying a Banana Nut muffin for breakfast the other day, or a Blueberry muffin for my afternoon snack.
And then the chocolate chip muffin…YUM! It was the perfect balance of muffin to chocolate. The chocolate wasn’t overpowering, so if you ate it for breakfast you wouldn’t feel like you accidentally grabbed dessert with your morning coffee. It’s made with ingredients that can actually give you fuel.
Rachel Lu is based out of Long Island, and thousands of local people have expressed their love for the company.
