Last night I tried one of Thai Kitchen’s meal kits for the first time and boy have I been missing out. One of the newest additions to their gluten-free product line is the Red Curry Kit, which comes with a small can of Thai Kitchen’s Coconut Milk, the red curry sauce and a bag of white rice. All you need to add is water, veggies and chicken or shrimp.
Thai Kitchen scores major points for how easy this is to cook. It takes about a half hour total to make (including prep time). All you have to do is boil and simmer the white rice, mix together the coconut milk and red curry sauce, dump in your protein and veggies of choice and boom! You’re on your way to eating a delicious Thai-inspired dinner. It makes about five servings, so if you’re like me and only cook for one to two people, you can definitely have the leftovers for lunch the next day.
The box suggested serving the coconut milk and red curry mixture separately from the rice, but I opted to pour it on top of the rice and go with more of a stir fry-style meal. I used a mixture of shrimp, celery, red and yellow peppers and broccoli for my filler, but you could add pretty much any veggie or meat you want. Chicken would really pair well with this mix and any sort of spicy pepper will complement the gluten-free curry sauce nicely.
Curry isn’t a common ingredient in my diet, but I think this dinner kit has changed that. It has a kick for sure, but it’s nothing that’s going to overpower the rest of the ingredients. The coconut milk (another ingredient I don’t typically use) gave the curry a creamy texture with just the slightest hint of sweetness.
