Gluten-Free Hummus and Vegetable Sandwich Recipe

The days are getting shorter and the weather is already turning colder, all signs that summer is nearly over. Before it is officially autumn, aka soup season, I wanted to share a recipe I’ve been enjoying all summer long. It combines two great gluten-free products into one delicious sandwich.  All you need is gluten-free bread, hummus, and veggies. Sandwiches similar to this one are available at many restaurants and always sounds delicious so it seemed only fair to make a gluten-free version that was easy to enjoy at home.

Gluten-Free Bread:
I decided to use Udi’s Gluten Free Bread because of its amazing texture and flavor. In addition, Udi’s has a whole grain option and is widely available, both big pluses in my book. Out of the bag Udi’s bread is really fluffy and soft. When it is toasted Udi’s gluten-free bread is stronger and has a nice crunchy surface that works great with spreads. I decided to lightly toast the bread so it could hold up to the moisture and the bulk of this type of sandwich. Once toasted, Udi’s Gluten Free Bread performed perfectly. Udi’s provides heating instructions on their official website which are especially useful if you are starting with a frozen loaf of bread.

Gluten-free Humus:
For the spread, I selected Sabra Hummus. Not only is Sabra Hummus deliciously creamy but it also comes in a wide variety of flavors. Sun Dried Tomato, Spinach and Artichoke, Roasted Red Pepper, and Chipotle are just a few of the tasty flavors I’ve enjoyed and there are many more to try all of which are gluten-free. For this sandwich I chose to use Sabra’s Classic Hummus, though any of the other flavors would help add even more flavor to this sandwich or any dish utilizing Sabra Hummus.

Finally for the veggies I chose to use cucumber, spinach and tomato. Since this sandwich is amazingly versatile, as many sandwiches are, you can easily substitute or add any vegetables or ingredients you desire and still end up with a very tasty and healthy sandwich.

To make the sandwich you just toast the bread, spread on the hummus, add the vegetables in layers in any order you prefer, close and enjoy!
