The Chicken Encrusting is a mixture of corn meal, parmesan cheese, almonds and spices – a blend that offers plenty of crunch and aroma. To use, simply dip your chicken in either butter or an egg mixed with some milk and then coat in the Chicken Encrusting. Bake until the chicken is cooked through.

When testing the recipe, I opted for the egg and milk approach, as that’s how my mother always breaded chicken. In fact, she always sprinkled some parmesan into our bread crumbs, so this mix brought back some childhood memories. I even cut up a few bite sized pieces to make homemade chicken nuggets.

While the chicken was cooking, my kitchen filled with the inviting smells of parmesan, garlic, and herbs. Inside, the top of my chicken toasted up nicely. The bottom got a little wet and I lost some of the coating, so I would recommend cooking your chicken on a rack to give it plenty of air flow.

When the chicken was ready, I could hardly wait to take a bite. I could taste the parmesan cheese in the Chicken Encrusting, but it wasn’t overpowering, and the crust actually managed to keep my overcooked chicken moist. Even better were my homemade chicken nuggets, which had the perfect coating to meat ratio. Any kid would be happy to dunk them into honey mustard or ranch dressing.
