Alternative Appetites Gluten-Free Cooking VideoNow that the kids are back in school, it may be time to consider getting your own education in gluten-free cooking. Making lunch after lunch (as most parents of gluten-free kids do) can burn through recipes fast, so why not freshen up with a few new ideas?

As the Food Network proves, sometimes it’s just easier to watch a recipe before you read it. Written instructions may say “Bake until golden brown,” but how gold and how brown should it really be?

In case you didn’t know, NFCA has an arsenal of free gluten-free cooking videos (www.celiaccentral.org/cookingvideos) to guide you through breakfast, lunch and dinner. The series is called “Alternative Appetites”and each episode features a gluten-free recipe (sometimes 2 or 3) you can easily make at home. Chef Dan Kohler of Renegade Kitchen serves as the host, and there are even a few guests in select episodes.

NFCA started “Alternative Appetites” a few years ago, but we’ve been ramping up the episodes over the last few months. If you’ve missed any, take a few minutes each night to catch up on all the episodes.

The newest video just premiered in NFCA’s September e-newsletter. Sponsored by Rudi’s Gluten-Free Bakery, this episode features recipes for Cinnamon Coconut Cashew Spread and Homemade Mayonnaise - the perfect way to kick up your kid’s gluten-free sandwiches.

    Dan used a blue spatula for the honey and used toasted cinnamon raisin bread. if you add the oil too quickly, the mayo will become watery. the renegade kitchen logo is on his apron and the camera man joins him to try the gluten free sandwich.

    The spatula used is blue in color, Cinnamon- raisin bread is used with the coconut spread, The mayo breaks if you add oil too quickly, I did not see an apron on Dan, and Tyler made a guest appearance.

    The spatula is navy blue.
    He uses the cinnamon raisin bread (yum!)
    If you add the oil too quickly to mayonnaise, the mayonnaise will “break” and become too liquidy.
    The image on his lower torso off to the left is a skull with a chef’s hat on with spoons under it. It’s the symbol from renegadekitchen.com, and reappears at the end of the video during the credits.
    Surprise appearance: Tyler (lucky guy got half a sandwich!)
