A few weeks ago I posted a review of Lucy’s cookies. This product was also featured in an article in the March 2010 edition of the NFCA’s Celiac Central Newsletter. Since then I’ve got to know the product, its story, and the impressive and growing success of these delicious gluten and allergen free cookies.
If you read the NFCA newsletter article or have visited Lucy’s cookies official website then you may know that the recipe behind these cookies was developed to provide a safe treat to Dr. Lucy Gibney’s child who had severe food allergies. You may also be aware that Lucy’s cookies are expanding its production to cater to its growing availability. In addition to being available in 6000 Starbucks locations, you can also find these amazing little cookies at mainstream supermarkets like Giant/Stop & Shop and Harris Teeter and in Whole Foods Markets throughout the country. If that wasn’t enough, Lucy’s cookies are also becoming near famous. They have been featured on The Rachael Ray Show and included in goody bags for film festivals and aw.
What all this success translates to is convenience for consumers who are gluten-free, have food allergies or sensitivities and even those on a vegan diet! The inspiration behind Lucy’s cookies was to provide those of us with special dietary needs a safe and handy treat that was widely available. I think it is awesome when such a goal is achieved. Not only for the company but also for the community it serves.
