Every month The National Foundation For Celiac Awareness (NFCA) provides an informative newsletter filled with helpful tips, news, recipes, and more for the celiac and gluten free community. “Gluten Free and Back to School” is a great and timely article included in this month’s issue. It is filled with useful tips and suggestions to help prepare for the upcoming school year. Included in this article are quick and easy gluten free breakfast, lunch and snack ideas. Some sample lunch menus are also included.
Taco salad with a gluten-free snack bar, a cup of mixed berries or other fruit, and a serving of Pirates Booty is one of the examples I liked best. The Taco salad consist of Tortilla chips with chopped tomatoes, avocado, shredded cheese, and shredded lettuce served in a container. A delicious, healthy, and gluten free corn chip is made by Food Should Taste Good and fits this taco salad recipe well. For the snack bar try one of Enjoy Life Foods gluten free snack bars.
